The RoleAs our Sous Chef, you will work directly alongside our Executive Chef to maintain an uncompromising standard of excellence. You will be a hands-on leader, mentor to our line staff, and a key contributor to our evolving culinary identity.
Key Responsibilities:
Menu Innovation: Lead the development of sophisticated, seasonal dishes that highlight the best of local North Fork and Atlantic bounty.
Kitchen Excellence: Maintain a "gold standard" for mise-en-place, organization, and sanitation.
Team Leadership: Foster a culture of professional growth, discipline, and mutual respect within the brigade.
Quality Control: Ensure every plate leaving the pass meets our exacting standards for aesthetics, flavor, and technique.
This position is designed for a seasoned professional looking to transition from the intensity of Manhattan to a high-caliber project on Long Island without sacrificing culinary standards.
NYC Pedigree: Minimum of 2 years of experience specifically as a Sous Chef in a reputable New York City fine-dining establishment.
Creative Vision: A deep understanding of seasonal cycles and the ability to conceptualize dishes that are both modern and soulful.
Technical Mastery: Advanced knowledge of contemporary and classical techniques (fermentation, precision butchery, sous-vide, etc.).
Poise Under Pressure: The ability to lead a high-volume, high-stakes service with a calm, commanding presence.
Competitive Compensation: A salary range of $85,000 – $100,000, reflective of your expertise.
